Papaya Fruit Smoothie

Papaya, Fresh Coconut Water  – these are the star ingredients in this undeniably refreshing smoothie. It’s  jam-packed with nutrients and antioxidants. Once you try this drink you will want to make it often.

I grew up picking the amazing papaya off the tree when I was a child. During summer school breaks, I used to visit my older sister who had one of the trees in her yard – it hanged over the stairs so I was able to reach over and pick them when they were perfectly ripe with the bright orange color.

Papaya is know for its high concentration of lycopene and fiber, Vitamin C and Vitamin A, amongst other effective enzymes.  And coconut water is loaded with electrolytes and it’s great for hydration. This is another excellent smoothie that I love to drink after my daily workout.  It will keep you full for a few hours and it will hydrate you.

Papaya Fruit Smoothie

Ingredients

  • 1 cup fresh coconut water
  • 1 cup fresh papaya seeded and diced
  • 1/2 of a starfruit diced
  • 1/2 small haas avocado (or 1/4 of a large one)
  • 1/2 organic pear diced
  • 1/2 lemon juiced
  • 1 sage leaf
  • 1/2 teaspoon pure organic vanilla extract
  • 3 tablespoons chopped walnut
  • 1 cup crushed ice

Instructions

  • I use a fresh young coconut. Cut a hole at the top and drain the water into a measuring cup.
    Note: Typically yields 1.5 cups of water.
  • Use a fresh papaya.  Remove the seed and dice.
  • Star Fruit. Use 1/2 of one.
  • In a blender, add the coconut water, papaya, starfruit and all the remaining ingredients.
  • Blend to your desired smoothie texture. Generally about one minute.
  • Pour into your favorite glass, sip and enjoy.  

Notes

All of these ingredients, I usually buy at my local grocery store.  You can also find them in many West Indian Supermarkets.
You can choose to eat the left over fruits or make at least two more batches of smoothie - use within two to three days. Be sure to store the cut fruits in the refrigerator.
