Fig Apples Smoothie

This Fig Apples Smoothie is a nutrient and antioxidant-rich drink that is high in fiber, potassium, calcium, and iron. I used figs as the star fruit in this recipe. I love to eat fresh figs raw when they are in season during the early summer months and then again in late summer into fall. Using fresh in-season fruits are usually cheaper to buy during their peak harvest months. Figs are rich in calcium which we all know helps strengthen bones.  Pineapples were added due to its high-level vitamin C and they are low in calories – 1/2 cup has approximately 41 calories.  The pineapple coupled with Granny Smith apples both contain rich amounts of flavonoids. Yogurt, almond butter, and some spices rounded out the flavors of this delightful and healthy drink.

Fig and Apples Smoothie

Ingredients

  • 4 small figs
  • 1/2 cup organic Granny Smith apple chunks
  • 1/2 cup fresh pineapple chunks
  • 6 ounces non-fat Greek yogurt
  • 1/2 teaspoon organic pure vanilla extract
  • 1/8 teaspoon cardamom
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon fresh grated nutmeg
  • 1 tablespoon almond butter
  • 1 cup crushed ice

Instructions

  1. Add all ingredients in a blender.  Blend until your desired smoothie texture - about one minute.
