One of my favorite things to do is to create amazing and interesting smoothies that are filled with antioxidants and nutrients. They have always worked well for me right after my intensive workouts – I can put away a meaningful portion that keeps me filled for hours.

During this past holiday season, I served cut up Persimmon fruit with a cheese and crackers platter – the response to the fruit was overwhelmingly positive. So in my quest to explore different types of fruits, I incorporated the nuitriant rich Persimmon; very ripened they pack an incredible flavor that gives the mango a run for its money. Plus, this probably little known fruit has a good amount of vitamin A and C as well as Fiber. I usually find them right in my local supermarket during the fall and early winter season. Many Asian fruit and vegetable markets also carry them.

I have used Persimmon in several differing fruits smoothies and I have to say they were all very good, but this is the one I truly fell in love with – it had just the right amount of creaminess. The flavors that rounded out this antioxidant-nutrition rich jem include blueberries, pineapples, pears, lime juice, peanut butter for protein, vanilla extract and cardamom. This recipe make two ten-ounces serving at 230 calories each.

Ingredients

  • 1/2 cup pomegranate juice
  • 1 ripe persimmon peeled and quartered
  • 1/2 cup fresh pineapple chunks
  • 1/2 medium organic pear core removed
  • 1 cup frozen organic frozen blueberries
  • 1/2 lime juiced
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon ground cardamom
  • 1 tablespoon peanut butter

Instructions

  • Place all ingredients in a blender and blend for up to one minute until you achieve smoothie texture – up to one minute
    Pour in your favorite glass and serve.

Notes

I used Madagascar Bourbon Vanilla Extract. It makes for an exciting flavor. You can substitute almond butter or your choice of protein instead of peanut butter. 
The frozen blueberries keeps it cold. Optional to add a few ice cubes – but not necessary.
