Powerhouse Coconut Mango Smoothie

Ingredients

  • 1 cup fresh coconut water
  • 1 cup crushed ice
  • 1 ripe mango sliced (discard seed)
  • 2 ripe kiwis peeled and cut in two
  • 1/2 lime juiced
  • 1 tablespoon peanut butter

Instructions

  • Add all ingredients in a blender. Blend until you achieve a smoothie texture - about one to one and a half minutes.
  • Pour into your favorite glass, sip and enjoy.

Notes

Many fine supermarkets now carry fresh young coconut with the harder outer-shell removed.  Use a very sharp butcher knife to cut off the top of the coconut leaving a hole at the top to pour out the water.  Depending on the size of the coconut you will get about 1-1/2 cups to 2 cups water.  The fresh coconut water taste so much better than the ones out of the box or can.  It's worth the investment.
