I use a fresh young coconut. Cut a hole at the top and drain the water into a measuring cup.
Note: Typically yields 1.5 cups of water.
Use a fresh papaya. Remove the seed and dice.
Star Fruit. Use 1/2 of one.
In a blender, add the coconut water, papaya, starfruit and all the remaining ingredients.
Blend to your desired smoothie texture. Generally about one minute.
Pour into your favorite glass, sip and enjoy.
All of these ingredients, I usually buy at my local grocery store. You can also find them in many West Indian Supermarkets.
You can choose to eat the left over fruits or make at least two more batches of smoothie - use within two to three days. Be sure to store the cut fruits in the refrigerator.
