Lemongrass Tea Smoothie

Ingredients

LEMONGRASS TEA:

  • 10 ounces water
  • 3 teaspoons dried lemongrass or fresh lemongrass
  • 2 slices fresh lemons

FOR THE SMOOTHIE:

  • 1 cup lemongrass tea
  • 6 small organic frozen strawberries
  • 3/4 cup organic frozen blueberries
  • 1/2 cup fresh pineapple chunks
  • 2 organic kiwis skin removed and cut in half
  • 1 tablespoon peanut butter
  • 1/4 teaspoon ground cardamon
  • 4 fresh mint leaves

Instructions

  • For the lemongrass tea - use three teaspoons dried lemongrass with 10 ounces of water. In a small pot, bring the water to a boil. Add the lemongrass and simmer over low heat for 10 minutes. Remove the pot from the heat. Add 2 slices of fresh lemons to the lemongrass tea.  Allow to sit for 5 minutes. Strain the tea into a blender - discard the lemongrass and lemons. Let the tea cool.
    Note: You can brew a few cups of the tea and store in refrigerator. You can use this tea with any of your desired fruits.
  • Add all the remaining ingredients to the blender with the tea. Blend for up one minute until smoothie texture is achieved.
    Pour into your favorite glass, serve, sip and enjoy!
