I love everything avocado.  It contains good healthy fat.  I usually cut avocado in half, sprinkle with salt and fresh black pepper and eat it by scooping it out with a spoon – makes a healthy snack.  Off course it has to be Haas Avocados. From time to time I love to make Guacamole and I’ve always gotten favorable comments from anyone who eats it.  I welcome your feedback on this recipe.

Garlicky Guacamole

This is a very garlicky flavored guacamole with lime juice.  A hit every time I make it and it's served with corn chips.  You can keep it healthier by using endives instead of chips.  Or simply eat it with a fork - no chips needed.

Ingredients

  • 3 haas avocados ripened
  • 2 tablespoons lime juice fresh squeezed
  • 1/2 cup fresh cilantro finely chopped
  • 1/3 cup red onions finely chopped
  • 3 jalapeno
  • 1 plum or vine ripened tomato
  • 3 garlic cloves - medium sized minced
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon sea salt

Instructions

  • Cut the jalapeño length wise in half, remove the seeds and finely chop
  • Dice the tomato - (small diced)
  • Cut each avocado lengthwise in half and remove the large seed
  • In a medium mixing bowl, scoop the avocado into it using a spoon
  • Using the back of the spoon or a fork, mash the avocados leaving some lumps
  • Sprinkle the lime juice over the avocado, add the chopped cilantro, red onions, minced garlic, sea salt and fresh ground black pepper.  Gently mix the ingredients into the mashed avocado
  • Add in the diced tomatoes and combine
  • Plate and serve with your favorite corn chips
    Enjoy!

Notes

You can add more or less jalapeño depending on how spicy or mild you like it. Use a glove when deseeding the jalapeño.
