Ingredients

  • 6 grape tomatoes or cherry tomatoes
  • 4 kumquats
  • 1 tablespoon garlic rough chopped
  • 2 tablespoons shallot rough chopped
  • 1/2 Habanero pepper no seeds (unless you want it spicy)
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons fresh oregano leaves
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika or substitute sweet paprika
  • 1/4 cup freshly squeezed lemon juice
  • 3/4 cup extra virgin olive oil
  • salt and freshly ground black pepper to taste

  • Dump all ingredients into a sturdy mason jar and immersion blend until all ingredients are well combined and emulsified.
    Alternatively, you can use a mini food processor to imulsify the dressing.
    6 grape tomatoes, 4 kumquats, 1 tablespoon garlic, 2 tablespoons shallot, 1/2 Habanero pepper, 2 teaspoons fresh thyme leaves, 2 teaspoons fresh oregano leaves, 1/4 teaspoon ground cumin, 1/4 teaspoon smoked paprika, 1/4 cup freshly squeezed lemon juice, 3/4 cup extra virgin olive oil, salt and freshly ground black pepper to taste
  • Use on your favorite salad or marinade fish and chicken. Dressing keeps for up to 5 days refrigerated.
