Add all the aromatics ingredients into a mini food processor - onions, garlic, ginger, cilantro, thyme, habanero, lime zest and juice. Pulse until combined and looks like a wet paste.
1 small onion, 3 scallions, 1 elephant garlic, 2-3 inches piece fresh ginger, 1 small bunch fresh cilantro, 1 tablespoons fresh thyme leaves, 2 limes, 1/2 - 3/4 Harbenaro or scotch bonnet pepper
Transfer the aromatics into a medium mixing bowl. Add in the remaining marinade ingredients and use a small spatula to mix thoroughly.
2 teaspoons sesame oil, 2 tablespoons soy sauce, 1/4 cup vinegar, 2 teaspoons kosher salt, 1 teaspoon freshly ground black pepper, 1 teaspoon smoked paprika, 1/2 teaspoon ground cumin, 1/4 teaspoon ground nutmeg, 1/2 teaspoon ground cinnamon, 3 teaspoon ground allspice
Add the tenderloins and mix thoroughly until all the chicken pieces are well coated. Set aside for 30 and up to 60 minutes to marinade.
2 pounds chicken tenderloins
