In a 5-quart dutch oven pot, heat the olive oil over medium flame.
Add the peppers, celery, onions, jalapeno, and garlic to the hot oil and saute for 10 minutes. Stir occasionally.
Add the ground beef. Using a wooden spoon, break up the meat to minimize large lumps and combine with the vegetables. Add 1 teaspoon salt, 1/2 teaspoon black pepper, and the chopped scallions.Cook for 12 to 15 minutes, stirring occasionally.
Add the rice, the remaining salt and black pepper and coat with the vegetable mixture.
Add the lime zest and juice and stir. Add the 2-1/4 cups of chicken broth. Stir, making sure all the rice grains are in the water.Note: The rice mixture will be covered by the water slightly. It may look like there is not enough water in the pot. The rice cooks quickly so you do not need more than the 2-1/4 cups water. The rice will be al dente and not starchy.
Cover the pot with a tight lid and bring to a boil. As soon as the boiling begins, lower the flame to simmer. Cook for 15 minutes.
Turn off the stove. Use a fork to fluff the rice. Cover and let it sit for 10 to 15 minutes before serving.
Plate, garnish with chopped scallions, serve and enjoy!
Notes
Cajun dirty rice recipes usually includes, chicken livers and ground meat. I skip the livers in my recipes. You can substitue ground turkey for the beef as I've done in the past.
