Ingredients

  • 12 - 16 ounces Haricots Verts Trimmed
  • 2 tablespoons extra virgin olive oil
  • 1 medium shallot peeled and sliced
  • 4 cloves garlic peeled and chopped
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon capers
  • 4 vine ripened tomatoes seeded and diced. (may substitute Roma tomatoes)
  • kosher salt to taste
  • freshly ground black pepper to taste

Instructions

  • Heat a deep sauté pan over medium flame.
  • Add in olive oil and shallots. Cook 1 to 2 minutes until fragrant.

  • Add garlic and dill. Mix. Cook 30 to 60 seconds until fragrant
    4 cloves garlic, 2 tablespoons fresh dill
  • Add in haricots vert, tomatoes, capers, salt and freshly ground black pepper. Mix to combine. Cover, reduce heat to medium low. Cook 5 to 8 minutes until beans are tender but Al dente. Turn off the stove and enjoy with your favorite entree.
    Note: the beans should be a little bit wobbly.
