Ingredients

  • 2 ripe organic peaches shredded
  • 5 cups water
  • 3 - 4 sprigs fresh English thyme
  • 1 1/2 tablespoons elderberries
  • 2 teaspoons wildflower honey Optional

Instructions

  • In a medium saucepan, add the shredded peaches, water and thyme sprigs.Bring to a boil over medium heat. Reduce heat and simmer 12 to 15 minutes until the peaches are tender.
    2 ripe organic peaches, 5 cups water, 3 - 4 sprigs fresh English thyme
  • Turn off the flame. Add in the elderberries. Steep 8 to 10 minutes.
    1 1/2 tablespoons elderberries
  • Use a fine mesh strainer to strain the tea into a heat proof jug or glass bowl.
  • If using a sweetener, stir it in while the tea is still hot. Pour into tea cup and enjoy warm or pour over ice cubes when cooled and drink cold.
    Note: Excess may be refrigerated up to 5 days. Makes 4 to 4 1/2 cups.
