No-Cooked White Bean Sauce

An amazingly easy no-cooked white bean sauce. Not only is it vegetarian and vegan friendly but it can be used in several ways. Serve as a condiment/sauce with chicken, seafood or meat dishes Or use it as a pasta sauce and even as a dip for crudités..

Equipment

Ingredients

  • 3 cloves fresh garlic roughly chopped
  • 1/2 cup fresh cilantro roughly chopped (can use the tender parts of the stem.)
  • 1 Jalapeños pepper roughly chopped (can remove all of the seeds or leave a little)
  • 1/2 lemon juiced (about 1 to 2 tablespoons)
  • 15 ounces northern or navy beans or Cannellini beans I used canned beans rinsed thoroughly
  • 1/8 teaspoon ground cumin
  • salt and freshly ground black pepper to taste
  • 1/2 cup extra virgin olive oil (add up to 3/4 for a more runny sauce and can also add a few tablespoons water)

Instructions

  • In a mini food processor or a blender, add all ingredients except the extra virgin olive oil. Blend for a few minutes to coarsely chop up the ingredients. Season with salt and freshly ground black pepper. Takes up to 1 minute.
  • Use a spatula to scrape down the sides of the prep bowl.
  • Pour in the extra virgin olive oil. Puree for 1 to 2 minutes to your desired smoothness.
    Note: To make a thinner sauce add more extra virgin olive oil and a few tablespoons water if desired.
  • Use the sauce to compliment chicken, seafood or meats. Or use as a sauce for pasta dishes. May also be served as a dip for crudités. Enjoy.
