Heat a large deep skillet or wok. Add the oil. Use medium heat.

Sauté the hot peppers until fragrant - about 1 to 2 minutes.

Add the garlic and ginger. Mix. Cook 30 to 60 seconds until fragrant.

Add the soy sauce, white wine and sesame oil. Cook up to 1 minute to marry the flavors.

Turn up the flame to medium high. Add in the spinach, a pinch of salt and freshly ground black pepper. Mix and cook up to 1 minute or until the spinach is wilted. Plate and serve as a side dish. Enjoy!
