  • 2 tablespoons extra virgin olive oil
  • 2 serrano peppers or jalapeños. chopped
  • 1 tablespoon garlic finely chopped
  • 1 tablespoon ginger peeled and finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese white wine
  • 2 teaspoons sesame oil
  • 1 large bunch Chinese water spinach rinsed and chopped into 3 inch pieces
  • salt and freshly ground black pepper

Instructions

  • Heat a large deep skillet or wok. Add the oil. Use medium heat.

  • Sauté the hot peppers until fragrant - about 1 to 2 minutes.

  • Add the garlic and ginger. Mix. Cook 30 to 60 seconds until fragrant.

  • Add the soy sauce, white wine and sesame oil. Cook up to 1 minute to marry the flavors.

  • Turn up the flame to medium high. Add in the spinach, a pinch of salt and freshly ground black pepper. Mix and cook up to 1 minute or until the spinach is wilted. Plate and serve as a side dish. Enjoy!
