Ingredients

  • skin from 1 ripened pineapple rinsed thoroughly
  • 8 cups water
  • 4 pieces lemongrass stalks (about 3 inches each)
  • 3 - 5 fresh thyme sprigs
  • 2 pieces fresh turmeric peeled and grated
  • 3 inch piece fresh ginger grated
  • 5 whole cloves
  • 1 cinnamon stick (about 3 inches piece)
  • white pepper freshly ground - about 10 - 15 grinds
  • 1/2 cup dried chamomile flowers
  • 1 tablespoon Manukau honey or your preferred sweetener

Instructions

  • In a 4-quart stock pot, add the water, pineapple skin, lemongrass, thyme, turmeric, ginger, cloves, cinnamon stick and freshly ground black pepper. Bring to a boil. Reduce heat and simmer 12 to 15 minutes.

  • Turn off the stove. Add in the chamomile flowers. Steep for 5 to 8 minutes. Strain. Pour into your favorite tea cup. Sip warm. Or cool, pour over ice cubes and enjoy as a refreshing summer iced tea. Enjoy.
    Note: Makes about 7 cups. Refrigerate excess for up to 5 days.
