Ingredients

For the Marinade

  • 1 tablespoon freshly grated garlic
  • 1 tablespoon fresh mixed herbs sage, thyme and oregano. Finely chopped
  • 1 lemon juiced
  • 1 tablespoon mustard course dijon
  • 1/3 cup balsamic vinegar
  • 2-3 tablespoons extra virgin olive oil
  • 1/2 - 1 teaspoon red pepper flakes OPTIONAL

For the Chicken Breasts

Instructions

  • Combine the marinade ingredients in a small bowl
    1 tablespoon freshly grated garlic, 1 tablespoon fresh mixed herbs, 1 lemon, 1 tablespoon mustard, 1/3 cup balsamic vinegar, 2-3 tablespoons extra virgin olive oil, 1/2 - 1 teaspoon red pepper flakes
  • Add the chicken breasts into a large enough baking dish. Season with the salt and freshly ground black pepper. Pour the marinade onto the chicken, and coat the chicken breasts all over. Let the breasts marinade, skin side down, for 30 to 60 minutes.
    2 1/2 - 3 pounds chicken breasts, 2 teaspoon kosher salt, 1 teaspoon freshly ground black pepper

Preheat Oven 400F degrees

  • Flip the chicken breasts, skin-side up. Roast for 30 to 45 minutes or until the internal temperature reaches 160F to 165F. Allow the breasts to rest for 5 to 10 minutes. Serve with your favorite side dishes.
