Zesty Avocado Tomato Vinaigrette

This wholesome and tasty avocado tomato vinaigrette is easy to make and works as a vinaigrette and a sauce. Drizzle it on meatballs, sandwiches and of course salads.

Ingredients

  • 1/2 large haas avocado
  • 1 vine ripened tomato remove bud and chop roughly. Can substitute Roma tomato
  • 1/2 large Jalapeño pepper with or without seeds. Roughly chop
  • 1 clove garlic peeled and roughly chopped
  • 1 - 2 tablespoons cilantro leaves
  • 1/8 - 1/4 teaspoon kosher salt or to taste
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground cumin
  • 1/4 cup freshly squeezed lime juice
  • 3/4 cup avocado oil Can substitute grape seed oil

Instructions

  • Dump all the ingredients into a 16 ounces wide mouth mason glass jar.
    1/2 large haas avocado, 1 vine ripened tomato, 1/2 large Jalapeño pepper, 1 clove garlic, 1 - 2 tablespoons cilantro leaves, 1/8 - 1/4 teaspoon kosher salt, 1/8 teaspoon freshly ground black pepper, 1/8 teaspoon ground cumin, 1/4 cup freshly squeezed lime juice, 3/4 cup avocado oil
  • Use an immersion blender and blend until all ingredients are combined with a saucy texture. It will be rich and creamy.
    Alternatively, all ingredients can be added to a mini food processor, and pureed until smooth and cream.
  • Can be covered with a tight lid and refrigerate for 4 to 5 days. If it lasts that long. Use to season salad, pour as a sauce over meatballs or chicken or even serve as a condiment in meatballs subs or sandwiches . Enjoy.
