Ingredients

  • 1/4 cup lemon juice freshly squeezed
  • 1 clove garlic grated or finely minced
  • 2 teaspoons fresh oregano finely minced
  • 1 tablespoons finely minced shallots
  • 1 - 2 teaspoons grey poupon mustard
  • 1/2 teaspoon red pepper flakes OPTIONAL
  • 1/8 teaspoon umami spice mix OPTIONAL
  • salt and freshly ground black pepper
  • 3/4 cup extra virgin olive oil may substitute avocado or grape seed oil

Instructions

  • Dump all ingredients into a 20 ounce glass jar with a tight lid. Shake rigorously until emulsified.
    1/4 cup lemon juice, 1 clove garlic, 2 teaspoons fresh oregano, 1 tablespoons finely minced shallots, 1 - 2 teaspoons grey poupon mustard, 1/2 teaspoon red pepper flakes, salt and freshly ground black pepper, 3/4 cup extra virgin olive oil, 1/8 teaspoon umami spice mix

Notes

I use this vinaigrette to season salads and I also used it as a marinade for fish and chicken.
