  • Saute onions in the extra virgin olive oil. Use medium heat. Cook the onions for a few minutes until the edges starts to brown lightly.
    2 tablespoons extra virgin olive oil, 1/2 small onion
  • Add in the garlic and thyme. Mix and cook 30 to 60 seconds until fragrant

  • Add in the butter, allow to melt. Gradually whisk in the flour. Cook 5 to 8 minutes over medium-low heat. Use a spatula to stir frequently and cook until lightly golden.

  • Gradually pour in the stock, while stirring with a whisk or spatula.

  • Season with salt and freshly ground black pepper to taste.

  • Add in the soy sauce or browning sauce. Stir and cook until the sauce thickens to your desired texture. Pour into a gravy boat and enjoy with your favorite roasted turkey or chicken.
