Heat an 8 or 10 inch skillet over medium flame.
1 - 2 tablespoons extra virgin olive oil
Saute the shallots, white parts of scallions and celery. 2 - 3 minutes

Add in the bell pepper and thyme leaves. Season with the umami spice mix and a pinch of salt. Mix and cook 3 to 4 minutes until the peppers starts to soften. Turn off the stove.

Transfer the aromatics to a plate and cool slightly.
Add the crabmeat to a medium mixing bowl. Add in the cooled aromatics, bread crumbs, mayonnaise and fresh cilantro and the green parts of the scallions. Use a rubber spatula to gently mix to combine.
