FOR THE CRAB STUFFING

  • 1 – 2 tablespoons extra virgin olive oil
  • 1 shallot peeled and diced
  • 1 small red bell pepper seeded and diced small
  • 1 small celery diced small
  • 2 scallions chopped small. White and green parts separated
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon umami spice magic mix homemade recipe in notes
  • pinch of kosher salt
  • 1 pound jumbo lump crab meat gently rinsed and drained
  • 1/4 cup Italian bread crumbs
  • 2 tablespoons mayonnaise
  • 1 cup loosely packed fresh cilantro

FOR THE SALMON

Instructions

Make the crab meat stuffing

  • Heat an 8 or 10 inch skillet over medium flame.
    1 – 2 tablespoons extra virgin olive oil
  • Saute the shallots, white parts of scallions and celery. 2 – 3 minutes
    1 shallot, 1 small celery, 2 scallions
  • Add in the bell pepper and thyme leaves. Season with the umami spice mix and a pinch of salt. Mix and cook 3 to 4 minutes until the peppers starts to soften. Turn off the stove.
    1 small red bell pepper, 1 teaspoon fresh thyme leaves, 1/2 teaspoon umami spice magic mix, pinch of kosher salt
  • Transfer the aromatics to a plate and cool slightly.
  • Add the crabmeat to a medium mixing bowl. Add in the cooled aromatics, bread crumbs, mayonnaise and fresh cilantro and the green parts of the scallions. Use a rubber spatula to gently mix to combine.
    Note: Mix gently to prevent breaking up the crab meat.
    1 pound jumbo lump crab meat, 1/4 cup Italian bread crumbs, 2 tablespoons mayonnaise, 1 cup loosely packed fresh cilantro

Preheat oven 400F/204C Degrees

  • Place the salmon steaks on a 1/4 sheet pan lined with parchment paper. Season the salmon steaks with the olive oil, salt, freshly ground black pepper and umami seasoning mix. Rub to coat.
    1 1/2 – 2 pounds salmon steaks, 2 teaspoons extra virgin olive oil, 1 teaspoon umami spice magic seasoning mix, 3/4 teaspoons kosher salt, 1/4 – 1/2 teaspoon freshly ground black pepper
  • Make a ring with the salmon steaks by slightly overlapping the ends to form a circle.
  • Stuff the center of each salmon circle with packed handful of crabmeat stuffing. Optionally drizzle with some olive oil.
  • Pop the stuffed salmon steaks into the preheated oven. Bake 8 to 10 minutes until the salmon is cooked to your ideal temperature. Remove from the oven and enjoy.
    Note: I like my salmon cooked medium so it cooks in about 8 minutes. Also love to serve this on a bed of sautéed garlic spinach.
