Ingredients

  • 1 1/2 pounds salmon fillets with or without skin - cut into 3 equal portions.

Marinade ingredients

  • 1 tablespoons freshly grated horseradish
  • 3 cloves garlic grated
  • 1 tablespoon fresh chopped dill plus extra for garnish
  • 3 teaspoons country dijon mustard
  • 3/4 teaspoon kosher salt adjust for your diet
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 teaspoon harissa powder
  • 2 tablespoons extra virgin olive oil or enough to make a paste

Instructions

Make the marinade

  • In a medium bowl, combine all the marinade ingredients. Mix to combine.
    1 tablespoons freshly grated horseradish, 3 cloves garlic, 1 tablespoon fresh chopped dill, 3 teaspoons country dijon mustard, 3/4 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper, 3/4 teaspoon harissa powder, 2 tablespoons extra virgin olive oil
  • Add the salmon portions and coat with the marinade. Set aside for 15 minutes.
    1 1/2 pounds salmon fillets

Preheat the oven 425F/218C Degrees.

  • Line a quarter sheet pan with parchment paper.
  • Remove the salmon from the marinade - it's okay to keep what ever marinade clings to the fish. Place the salmon on the parchment paper.
  • Transfer into the preheated oven. Roast the salmon for 8 to 10 minutes depending on thickness and desired temperature.
    Note: I cooked the salmon for 8 minutes for a medium temperature - about 135F.
