Healthy Horseradish-Mustard Salmon
Ingredients
- 1 1/2 pounds salmon fillets with or without skin – cut into 3 equal portions.
Marinade ingredients
- 1 tablespoons freshly grated horseradish
- 3 cloves garlic grated
- 1 tablespoon fresh chopped dill plus extra for garnish
- 3 teaspoons country dijon mustard
- 3/4 teaspoon kosher salt adjust for your diet
- 1/2 teaspoon freshly ground black pepper
- 3/4 teaspoon harissa powder
- 2 tablespoons extra virgin olive oil or enough to make a paste
Instructions
Make the marinade
- In a medium bowl, combine all the marinade ingredients. Mix to combine.1 tablespoons freshly grated horseradish, 3 cloves garlic, 1 tablespoon fresh chopped dill, 3 teaspoons country dijon mustard, 3/4 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper, 3/4 teaspoon harissa powder, 2 tablespoons extra virgin olive oil
- Add the salmon portions and coat with the marinade. Set aside for 15 minutes.1 1/2 pounds salmon fillets
Preheat the oven 425F/218C Degrees.
- Line a quarter sheet pan with parchment paper.
- Remove the salmon from the marinade – it's okay to keep what ever marinade clings to the fish. Place the salmon on the parchment paper.
- Transfer into the preheated oven. Roast the salmon for 8 to 10 minutes depending on thickness and desired temperature.Note: I cooked the salmon for 8 minutes for a medium temperature – about 135F.
