Ingredients

  • 7 cups water
  • 1/4 cup lemongrass chopped. I used garden fresh lemongrass, the grassy parts.
  • 1/4 cup fresh ginger chopped, no need to peel
  • 1/2 cup mint leaves I used a combination of peppermint, spearmint and chocolate mints.
  • 1 tablespoon honey I used Manuka honey or use your preferred sweetener

Instructions

  • In a 3 quarts saucepan, add the water, lemon grass and ginger. Bring to a boil and simmer for 15 minutes or up to 25 minutes.
    7 cups water, 1/4 cup lemongrass, 1/4 cup fresh ginger
  • Turn off the heat and add in the mint leaves. Allow to steep for 5 to 10 minutes.
    1/2 cup mint leaves
  • Strain into a heat proof jug. Sweeten with the honey or your preferred sweetener. Sip warm or pour over ice cubes for a cold refreshing summer drink.
