- 1/4 cup fresh ginger chopped, no need to peel
- 1/2 cup mint leaves I used a combination of peppermint, spearmint and chocolate mints.
- 1 tablespoon honey I used Manuka honey or use your preferred sweetener
Instructions
- In a 3 quarts saucepan, add the water, lemon grass and ginger. Bring to a boil and simmer for 15 minutes or up to 25 minutes.7 cups water, 1/4 cup lemongrass, 1/4 cup fresh ginger
- Turn off the heat and add in the mint leaves. Allow to steep for 5 to 10 minutes.1/2 cup mint leaves
- Strain into a heat proof jug. Sweeten with the honey or your preferred sweetener. Sip warm or pour over ice cubes for a cold refreshing summer drink.1 tablespoon honey
