Ingredients

Dry Ingredients:

Wet Ingredients and Herbs:

  • 1/4 cup melted butter
  • 1/4 cup warm whole milk
  • 1 teaspoon grated garlic
  • 2 teaspoons finely minced fresh cilantro or parsley

Other Ingredients:

  • 1/2 cup plain non-fat Greek yogurt
  • small amount of flour for dusting work surface

For Brushing the Flat Breads:

  • 2 tablespoons butter
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons grated garlic
  • 2 teaspoons finely minced cilantro or parsley

Instructions

Prepare the Garlic-Cilantro Butter:

  • In a small saucepan, combine butter, garlic and cilantro. Heat until the butter is melted and the garlic is fragrant.

  • Remove from heat and add the milk.

Combine Dry and Wet Ingredients:

  • In a medium bowl, combine the dry ingredients.
    2 cups all purpose flour, 3 teaspoons granulated sugar, 3/4 teaspoon baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon kosher salt
  • Add the milk mixture and yogurt. Mix using your hands or a spoon until a dough forms.
    1/2 cup plain non-fat Greek yogurt

Knead and Rest the Dough:

  • Transfer the dough to a lightly flowered work surface. Knead for a few minutes until smooth.

  • Shape into a round. Return to the bowl. Cover with a clean kitchen towel. Rest 15-30 minutes.

Divide and Shape the Dough:

  • Divide the dough into 6 to 8 portions. Shape into rounds. Return the rounds to the bowl. Cover and rest for 10-15 minutes.

Prepare the Brushing Mixture:

  • In a small pan or pot, cook the garlic and cilantro in the butter and olive oil until fragrant. Set aside to brush the flatbreads.

Roll out the Flatbreads:

  • On a lightly floured work surface, use a rolling pin to roll each portion into a 3 - 4 inch round.

Cook the Flatbread:

  • Heat a tawa or frying pan on medium heat.
  • Cook the rounds 2 - 3 at a time. Cook each side for 3 - 4 minutes, brushing each side with the melted butter mixture. Cook until golden brown.

Serve:

  • Keep the breads warm in a kitchen towel as they are removed from the stove. Serve as desired. Enjoy!
