Equipment

  • 1 tea pot or kettle
  • 1 2 quart sauce pan

Ingredients

FOR THE PEACH LIQUID:

  • 3 ripened peaches organic. Shredded. If the peaches are super ripened they can be chopped.
  • 2 teaspoons fresh ginger peeled or sliced. (about a narrow 1 inch piece)
  • 1 cinnamon stick
  • 1/2 teaspoon Cardamom seeds
  • 2 whole cloves
  • 2 teaspoons raw honey can use up to 4 teaspoons or to your taste.
  • 2 to 3 cups water

FOR THE TEA:

  • 2 cups water
  • 1 tablespoon Earl Grey Black Tea Leaves This can be adjusted to your desired strength.
  • 1 lime juiced (Optional)

Instructions

FOR THE PEACH LIQUID:

  • In a 2 quart saucepan, add the shredded peaches and the remaining peach liquid ingredients.
  • Use medium high heat and bring to a boil. Reduce heat and simmer 10 to 12 minutes until the peaches have softened.
Note: Very ripe peaches will cook faster but still let it simmer to marry all the spices flavors.
  • Turn off the heat. Strain the liquid into a large enough container that can accommodate the Black Tea as well. Discard the peach ingredients.

Simultaneously BREW THE BLACK TEA:

  • In a tea pot or small pot, add the water. Bring just to a boil.
  • Turn off the stove. Add in the black tea leaves. Let the leaves steep for 5 minutes. Strain if needed.

COMBINE THE PEACH LIQUID AND TEA:

  • Add the tea into the peach liquid. Stir. Allow to cool.
Note: To quick cook, I put it in the freezer for up to 30 minutes.
Also the peachy tea can be sipped hot/warm.
  • Once the peach tea is cool, add the lime juice if using. Stir. Pour over ice cubes and enjoy!
