  • Add the pineapple skins to a large pot. Add in the spices and water. Bring to a boil using high heat. Reduce heat and simmer 12 to 15 minutes,
    1 ripe pineapple, 1 teaspoon whole allspice, 1 teaspoon juniper berries, 6 - 10 cloves, 1 piece cinnamon stick, 8 cups water
  • Turn off the flame. Add in the black tea leaves. Steep for 5 to 8 minutes, depending on your desired strength. Stain the tea into a large heat proof jug and discard the pineapple skins and spices.
    2 tablespoons black tea leaves
  • Mix in the honey and lemon juice. Stir to disolve the honey. The tea can be sipped warm or refrigerate until cool. Pour over ice and enjoy.
    Note: This makes about 7 cups and can be refrigerated for up to 5 days.
