Pineapple Skin Black Tea
Equipment
- 1 strainer
Ingredients
- 1 ripe pineapple washed thoroughly. Remove the skin and chop roughly. Reserve the pineapple flesh for eating or other uses.
- 1 teaspoon whole allspice
- 1 teaspoon juniper berries
- 6 – 10 cloves
- 1 piece cinnamon stick about 3 inches long
- 8 cups water
- 2 tablespoons black tea leaves
- 1/4 cup freshly squeezed lemon juice
- 4 teaspoons Manukau honey or substitute your favorite sweetener
Instructions
- Add the pineapple skins to a large pot. Add in the spices and water. Bring to a boil using high heat. Reduce heat and simmer 12 to 15 minutes,1 ripe pineapple, 1 teaspoon whole allspice, 1 teaspoon juniper berries, 6 – 10 cloves, 1 piece cinnamon stick, 8 cups water
- Turn off the flame. Add in the black tea leaves. Steep for 5 to 8 minutes, depending on your desired strength. Stain the tea into a large heat proof jug and discard the pineapple skins and spices.2 tablespoons black tea leaves
- Mix in the honey and lemon juice. Stir to disolve the honey. The tea can be sipped warm or refrigerate until cool. Pour over ice and enjoy.Note: This makes about 7 cups and can be refrigerated for up to 5 days.1/4 cup freshly squeezed lemon juice, 4 teaspoons Manukau honey
