Ingredients

  • 1/2 pounds oyster mushrooms About 1 large head organic
  • 1/2 pounds maitake mushrooms About 2 small or 1 large head organic
  • 1/2 pounds Cremini mushrooms (can substitute Baby Bella mushrooms
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 5 to 10 cloves garlic. Smashed. depending on your taste bud.
  • 1 to 2 sprigs fresh rosemary about 1 tablespoons
  • 5 to 6 sprigs fresh thyme leaves
  • 3 tablespoons extra virgin olive oil or enough to coat the mushrooms thoroughly

Instructions

Preheat oven 425F/218C Degrees. Prepare a half sheet pan lined with parchment paper. And prepare the mushrooms

  • Using your hands, gently pull the petals of the oyster mushroom apart. Break them into the portion sizes you like and cut off any of the bottom stems. Add them to the parchment paper.
    Note: These mushrooms are relatively clean. Gently brush off any visible residues if any.
  • For the maitake mushrooms, use a knife to cut the stem section and pull them apart into portion sizes (Be sure not to cut the leaves section - this damages them.) Cut off any rough stems.Add them to the parchment paper lined sheet pan.

  • Cut the cremini mushrooms in halves or thirds depending on the size. Add them to the parchment paper lined sheet pan.
    Note: Gently brush off any visible residues if any. Can also quickly rinse these under running water.
  • Add the smashed garlic, rosemary and thyme sprigs to the sheet pan.
  • Sprinkle with salt and freshly ground black pepper.
  • Drizzle the olive oil, all over. Use your fingers to gently toss the mushrooms coating them all over with the olive oil.
  • Place the sheet pan in the preheated oven and bake the mushrooms until golden brown and sizzling. About 20 to 25 minutes.
  • Remove and serve as a side dish or even a snack. Can also be added to pasta or rice dishes. Enjoy.
