In a small bowl, combine the spices - old bay season, chili powder, paprika, salt and freshly ground black pepper

Add the shrimps into a medium mixing bowl, Season with the spice mix and olive oil.Note: the shrimps can be cooked immediately or rest for 15 to 30 minutes. 8 ounces large shrimps, 1 -2 teaspoons extra virgin olive oil
Heat a stainless steel skillet over medium flame. Add the olive oil.

Sauté the onions, 2 to 3 minutes until it's fragrant and starts to soften. Add a pinch of salt if desired.

Add in the thyme leaves and garlic. Mix. Cook 30 to 60 seconds

Add in the seasoned shrimps. Mix and cook until no longer pink. 2 to 3 minutes.Note: Shrimps cook time will depend on the size of the shrimps. 8 ounces large shrimps
Turn off the stove. Mix in the scallions. Transfer to a mixing bowl.
3 scallions
