You either love or hate okras, but you can fall in love with this flavorful fusion of roasted okra with shrimps dish. Specifically, okras are generally associated with gumbo and they have a tendency to ooze sliminess. Hence, the reason for being turned-off from them. Importantly, for this recipe, the ability to roast them eliminates the sliminess. Not to mention the incredibly delightful seasoning mix results in a burst of flavors with a hint of spiciness.

To begin this roasted okras with shrimps dish starts with thoroughly washed and dried okras. Additionally, they are sliced and seasoned well. Importantly, the okras must be really dried well using paper towels. Next up, a spice mixture consisting of chili powder, sweet paprika, kosher salt, red pepper flakes adds a rich spice flavor to the okras. Simply, toss diagonally sliced okras with extra virgin olive oil and the spice mix. Additionally, a small amount of corn starch is mixed into the okras. Hence, creating the ultimate no-slim okras. Finally, dump the seasoned okras onto a parchment-lined half sheet pan then pop them into a preheated 425F/218C degrees oven. Viola, fifteen to twenty minutes later out pop a golden and delicious roasted okra, minus the sliminess.

Moving on, large shrimps take on a similar spice mixture that enveloped the okras but with a twist. That means a bit of old bay seasoning joins in on the flavor party. Furthermore, a simple aromatics combination of thinly sliced onions, fresh garlic and fresh thyme leaves, are quickly sautéed in a stainless steel skillet, adding a deeper depth of flavor to the final dish. Finally, the well seasoned shrimps are added to the aromatics and quickly sautéed.

Ingredients

FOR THE OKRA

FOR THE SHRIMPS

  • 8 ounces large shrimps peeled and deveined
  • 1 – 2 tablespoons extra virgin olive oil for pan frying the shrimps

SPICE MIX FOR SHRIMPS

AROMATICS FOR SHRIMPS

  • 1 small onion peeled and sliced thinly
  • 1 – 2 teaspoons fresh thyme leaves
  • 1 clove garlic peeled and chopped roughly
  • 3 scallions trimmed and sliced
  • Optional: pinch of salt

Instructions

Preheat oven 425F/218C Degrees

    Prepare the Okra

    • In a small bowl, combine the chili powder, paprika, black pepper and salt. Add the okra to a medium mixing bowl. Toss with the olive oil and spice mix.
      1/2 teaspoon chili powder, 1/2 teaspoon sweet paprika, 1/2 teaspoon kosher salt, 1/8 teaspoon freshly ground black pepper, 1/4 teaspoon red pepper flakes
    • Add the okra to a medium mixing bowl. Toss with the olive oil, spice mix and the cornstarch
      12 ounces okras, 2 – 4 teaspoons extra virgin olive oil, 1 – 2 teaspoons corn starch
    • Dump the seasoned okra onto a sheet pan lined with parchment paper. Spread in a single layer.
    • Pop the pan into preheated oven. Roast until the okras are slightly charred around the edges – about 15 to 18 minutes. Remove from the oven.

    Season and cook the shrimps

    • In a small bowl, combine the spices – old bay season, chili powder, paprika, salt and freshly ground black pepper
      1/4 teaspoon old bay seasoning, 1/4 teaspoon chili powder, 1/4 teaspoon sweet paprika, 1/8 teaspoon kosher salt, 1/8 teaspoon freshly ground black pepper
    • Add the shrimps into a medium mixing bowl, Season with the spice mix and olive oil.
      Note: the shrimps can be cooked immediately or rest for 15 to 30 minutes.
      8 ounces large shrimps, 1 -2 teaspoons extra virgin olive oil
    • Heat a stainless steel skillet over medium flame. Add the olive oil.
      1 – 2 tablespoons extra virgin olive oil
    • Sauté the onions, 2 to 3 minutes until it's fragrant and starts to soften. Add a pinch of salt if desired.

    • Add in the thyme leaves and garlic. Mix. Cook 30 to 60 seconds
      1 – 2 teaspoons fresh thyme leaves, 1 clove garlic
    • Add in the seasoned shrimps. Mix and cook until no longer pink. 2 to 3 minutes.
      Note: Shrimps cook time will depend on the size of the shrimps.
      8 ounces large shrimps
    • Turn off the stove. Mix in the scallions. Transfer to a mixing bowl.

    Bring the shrimps and okra together.

    • Add the okra into the bowl with the shrimps. Mix to combine. Serve over rice or with bread. Enjoy.
