Ingredients

  • 2 pounds organic ground turkey
  • kernels from 1 fresh corn
  • 1 large shallot chopped
  • 1 jalapeño seeded and fine diced
  • 2 cloves garlic minced
  • 2 scallions chopped
  • 1/4 cup fresh cilantro finely chopped
  • 1/2 tablespoon fresh thyme finely chopped
  • 2 tablespoons sesame oil
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 3/4 teaspoon chili powder
  • 6 teaspoons extra virgin olive oil
  • 6 slices pepper jack cheese at room temperature
  • avocado slices
  • 6 hamburger buns toasted

Instructions

  • Heat sesame oil over medium heat
  • Add shallots and jalapeño. Sauté for 3 to 4 minutes.
  • Add herbs and garlic. Sauté for 1 minute until fragrant.
  • Add the spices, salt and pepper. Sauté for 1 minute until fragrant.
  • Add corn kernels and cook for 2 minutes.
  • Transfer the spiced mixture to a medium bowl and allow to cool.
  • Once the spiced mixture is cool, add the ground turkey to the mixture. Mix to combine.
  • Form into 6 patties, about 1/4 inch thick.
  • In a non stick frying pan, heat 2 teaspoons olive oil. Cook the turkey burgers in batches for 10 to 12 minutes (5 to 6 minutes per side). During the final 2 minutes cook time, add 1 slice of cheese per pattie - cook till melted. add olive oil as needed for each batch
Notes: Depending on the size of the frying pan, cook 2 to 3 burgers per batch - do not over crowd the pan as it will prevent the burger patties from forming a nice crust.
Use room temperature cheese - it melts quicker.
  • Serve the pattie on a toasted hamburger bun and top with avocado slices as desired. Add your favorite condiment if desired. Enjoy.

Notes

This turkey burger can be cooked on an outdoor grill - perfect for the summer time.
