In a stainless steel skillet, sauté the onions, in the olive oil for 2 - 3 minutes. Use medium heat.

Add in the garlic, scallions, sage, thyme and habanero pepper. Mix and cook 30 to 60 seconds until fragrant.
4 cloves garlic, 2 scallions, 1 tablespoon fresh sage, 1 tablespoon fresh thyme leaves, 1 -2 teaspoons chopped habanero pepper
Add in the turkey ground meat. Season with salt and freshly ground black pepper. Mix. Use a potato masher to mash out as much lumps as possible. Cook until the meat is no longer pink and it starts to brown. Transfer to a plate and cool completely.
