- 500 grams all purpose flour
- 15 grams granulated sugar
- 12 grams kosher salt
- 3 grams instant yeast
- 300 grams water room temperature
- 50 grams extra virgin olive oil
For Brushing the Dough
- 100 grams butter
- 50 grams extra virgin olive oil
For the Filling:
- 2 – 3 tablespoons extra virgin olive oil
- 1/2 onion peeled and diced
- 4 cloves garlic peeled and grated
- 2 scallions chopped finely
- 1 tablespoon fresh sage finely minced
- 1 tablespoon fresh thyme leaves minced if needed
- 1 -2 teaspoons chopped habanero pepper OPTIONAL
- 1 pound turkey ground meat
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
Make the Dough:
- In a large mixing bowl, combine flour, sugar, salt, yeast and water. Use a dough whisk to mix until it starts to form a dough. Use your hands to continue kneading for 3 to 4 minutes.500 grams all purpose flour, 15 grams granulated sugar, 12 grams kosher salt, 3 grams instant yeast, 300 grams water
- Add in the olive oil. Knead until the oil is fully incorporated into the dough. The dough should be sticky. Cover the dough with plastic wrap and rest for 30 to 45 minutes.50 grams extra virgin olive oil
Make the butter oil mixture:
- Add the butter and oil into a small pot. Melt the butter over medium low heat. Remove and set aside.100 grams butter, 50 grams extra virgin olive oil
Make the filling:
- In a stainless steel skillet, sauté the onions, in the olive oil for 2 – 3 minutes. Use medium heat.2 – 3 tablespoons extra virgin olive oil, 1/2 onion
- Add in the garlic, scallions, sage, thyme and habanero pepper. Mix and cook 30 to 60 seconds until fragrant.4 cloves garlic, 2 scallions, 1 tablespoon fresh sage, 1 tablespoon fresh thyme leaves, 1 -2 teaspoons chopped habanero pepper
- Add in the turkey ground meat. Season with salt and freshly ground black pepper. Mix. Use a potato masher to mash out as much lumps as possible. Preheat oven 375F Degrees:
Divide, Shape, Stuff and Bake:
- Divide the dough into 12 equal portions. Shape into rounds. Cover and rest 10 minutes.
- Use a rolling pin to roll out each piece of dough into a thin rectangle about 8 to 10 inches long. The rectangles doesn't have to be perfect.
- Brush each rectangle with the melted butter mixture. Sprinkle 3 to 4 tablespoons of the mince meat mixture all over the dough, leaving enough room on all the ends to roll the filled dough into a log shape. Fold the two long ends into the center of the dough and brush with more butter mixture. Then fold up the shorter ends to shape into logs.
- Place the filled dough logs onto a half sheet pan lined with parchment paper. Brush the top of the rolls with more butter mixture.
- Transfer to the oven and bake 20 to 25 minutes until lightly golden.
- Remove from the oven. Brush with more butter mixture if desired. Cool slightly before serving. Enjoy!
