Turmeric Spiced Sautéed Corn

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1/2 medium red onion peeled and diced
  • 1 large red bell pepper seeded and diced. May sub your favorite color
  • 1/8 teaspoon kosher salt
  • 1 tablespoon fresh ginger peeled and minced
  • 1/2 tablespoon fresh garlic peeled and minced
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon red pepper flakes can use up to 1 teaspoon
  • 3 fresh corns remove kernels
  • zest from 2 limes
  • 1 tablespoon freshly squeezed lime juice

Instructions

  • Heat a 10 to 12 inch cast iron skillet over high heat.
    Note: May use a stainless steel skillet
  • Add the extra virgin olive oil. Reduce the heat to medium.
  • Add onions and sauté 1 minute until fragrant.
  • Add in the bell peppers and salt. Mix and cook 1 minute.
  • Add ginger, garlic and thyme. Mix and cook 30 seconds.
  • Add turmeric and red pepper flakes. Mix. Cook 30 seconds.
  • Add corn kernels and lime zest. Mix and cook 3 to 4 minutes until all the flavors marry together and the corn is cooked through to al dente texture.
  • Turn off the heat. Pour in the lime juice. Mix to combine.
  • Serve hot with your favorite entree.
