Turmeric Spiced Sautéed Corn
This corn side dish is a healthy delicious recipe that comes together in less than 10 minutes.
Ingredients
- 2 tablespoons extra virgin olive oil
- 1/2 medium red onion peeled and diced
- 1 large red bell pepper seeded and diced. May sub your favorite color
- 1/8 teaspoon kosher salt
- 1 tablespoon fresh ginger peeled and minced
- 1/2 tablespoon fresh garlic peeled and minced
- 2 teaspoons fresh thyme leaves
- 1 teaspoon ground turmeric
- 1/2 teaspoon red pepper flakes can use up to 1 teaspoon
- 3 fresh corns remove kernels
- zest from 2 limes
- 1 tablespoon freshly squeezed lime juice
Instructions

Heat a 10 to 12 inch cast iron skillet over high heat.
Note: May use a stainless steel skillet

Add the extra virgin olive oil. Reduce the heat to medium.

Add onions and sauté 1 minute until fragrant.

Add in the bell peppers and salt. Mix and cook 1 minute.

Add ginger, garlic and thyme. Mix and cook 30 seconds.

Add turmeric and red pepper flakes. Mix. Cook 30 seconds.

Add corn kernels and lime zest. Mix and cook 3 to 4 minutes until all the flavors marry together and the corn is cooked through to al dente texture.

Turn off the heat. Pour in the lime juice. Mix to combine.

Serve hot with your favorite entree.
