This turmeric spiced sautéed corn is the ultimate summer side dish. Savory, sweet and spicy with an al dente crunch in every bite. Sautéing the corn results in a the development of full flavored sweetness with less chewiness. However, the corn can be grilled and the kernels removed. This will give the dish a grill like flavor but the corn will be have a bit of chewy texture. Turmeric Spiced Sautéed Corn

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1/2 medium red onion peeled and diced
  • 1 large red bell pepper seeded and diced. May sub your favorite color
  • 1/8 teaspoon kosher salt
  • 1 tablespoon fresh ginger peeled and minced
  • 1/2 tablespoon fresh garlic peeled and minced
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon red pepper flakes can use up to 1 teaspoon
  • 3 fresh corns remove kernels
  • zest from 2 limes
  • 1 tablespoon freshly squeezed lime juice

Instructions

  1. Heat a 10 to 12 inch cast iron skillet over high heat.

    Note: May use a stainless steel skillet

  2. Add the extra virgin olive oil. Reduce the heat to medium.

  3. Add onions and sauté 1 minute until fragrant.

  4. Add in the bell peppers and salt. Mix and cook 1 minute.

  5. Add ginger, garlic and thyme. Mix and cook 30 seconds.

  6. Add turmeric and red pepper flakes. Mix. Cook 30 seconds.

  7. Add corn kernels and lime zest. Mix and cook 3 to 4 minutes until all the flavors marry together and the corn is cooked through to al dente texture.

  8. Turn off the heat. Pour in the lime juice. Mix to combine.

  9. Serve hot with your favorite entree.
