- 12 – 16 ounces Haricots Verts Trimmed
- 2 tablespoons extra virgin olive oil
- 1 medium shallot peeled and sliced
- 4 cloves garlic peeled and chopped
- 2 tablespoons fresh dill chopped
- 1 tablespoon capers
- 4 vine ripened tomatoes seeded and diced. (may substitute Roma tomatoes)
- kosher salt to taste
- freshly ground black pepper to taste
Instructions
- Heat a deep sauté pan over medium flame.
- Add in olive oil and shallots. Cook 1 to 2 minutes until fragrant.2 tablespoons extra virgin olive oil, 1 medium shallot
- Add garlic and dill. Mix. Cook 30 to 60 seconds until fragrant4 cloves garlic, 2 tablespoons fresh dill
- Add in haricots vert, tomatoes, capers, salt and freshly ground black pepper. Mix to combine. Cover, reduce heat to medium low. Cook 5 to 8 minutes until beans are tender but Al dente. Turn off the stove and enjoy with your favorite entree.
