Ingredients

  • 1 medium onion peeled and roughly chopped
  • 10 – 12 cloves fresh garlic or 1 elephant size garlic, peeled and roughly chopped.
  • 1 habanero pepper with or without seeds
  • 4 scallions
  • 4 broad leaf thyme (cuban oregano)
  • 10 culantro leaves
  • 1/2 cup married man pork basil or thai basil
  • 3 tablespoon extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice or lime juice

Instructions

  • Dump all ingredients into a mini food processor or blender.
    1 medium onion, 10 – 12 cloves fresh garlic, 1 habanero pepper, 4 scallions, 4 broad leaf thyme, 10 culantro leaves, 1/2 cup married man pork basil, 3 tablespoon extra virgin olive oil, 1 tablespoon freshly squeezed lemon juice
  • Blend until well combined. Transfer to a glass jar and use as desired to season meats, fish, poultry and vegetables.
    Note: Makes 2 to 3 cups. Refrigerate up to 5 days or freeze up to 3 months.
