  • 2 pints organic blueberries use firm blueberries. Wash thoroughly.
  • 1 sprig fresh rosemary
  • 2 – 3 sprigs fresh thyme

Make the Pickling Liquid

  • In a small saucepan, add the vinegar, salt, sugar, and peppercorns. Stir. Bring to a boil using medium flame. Cook until salt and sugar are completely resolved Remove from the flame. Let cool..
    2 cups Champagne vinegar, 2 teaspoons kosher salt, 1/4 cup granulated sugar, 1 teaspoons whole black peppercorns

Prepare the Blueberries

  • In the meantime prepare the blueberries. Rinse them thoroughly. Discard any soft berries. Add the firm blueberries into a sterile 2-pint pickling jar.
    Note: To sterilize the jar, dunk it quickly in hot water. Remove it and set aside.
    2 pints organic blueberries
  • Add the rosemary and thyme sprigs into the jar.
    1 sprig fresh rosemary , 2 – 3 sprigs fresh thyme
  • When the liquid is cool enough, pour it over the berries and herbs. Pour enough of the liquid as necessary to completely cover the berries and herbs.
    Note: Cool the liquid so that it doesn't break the jar.
  • When the liquid is fully cooled, refrigerate for at least 2 weeks before using.
    Note: The pickled berries will last up to 1 year in the refrigerator. Add the berries to salads and use some to make a delicious blueberries salad dressing.
