Ingredients

For the Marinade:

  • 1 cup fresh mixed herbs mostly cilantro with 1 tbsps each fresh oregano and thyme (roughly chopped)
  • 1 elephant garlic peeled and roughly chopped (or 5 – 6 cloves smaller garlic)
  • 1/2 red onion peeled and roughly chopped
  • 2 scallions roughly chopped
  • 1 medim poblano pepper seeds removed and freshly chopped
  • 1 extra small habanero pepper OPTIONAL
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon rice cooking wine (we use premium shoaling)
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 3 tablespoons extra virgin olive oil

For the Red Snapper

Instructions

Make the Marinade:

  • Dump the marinade ingredients into a mini food processor or blender. Pulse until all the ingredients are thoroughly combined.
    1 cup fresh mixed herbs, 1 elephant garlic, 1/2 red onion, 2 scallions, 1 medim poblano pepper, 1 extra small habanero pepper, 1 tablespoon toasted sesame seeds, 1 tablespoon rice cooking wine, 2 tablespoons soy sauce, 2 teaspoons sesame oil, 3 tablespoons extra virgin olive oil

Season the Red Snapper Fillets

    Preheat oven 400/205 degrees Fahrenheit/celsius

    • In an oven proof rectangular baking dish, add the fish filets. Season with the salt and freshly ground black pepper. Splash on all the marinade and smother the fillets in the seasoning. If using red onions, mix them into the seasoning. Let the fish marinate for 15 minutes or up to 30 minutes.
      2 pounds fillet red snapper, 3/4 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper, 1 batch of the marinade, 1/2 red onion

    Bake the Fish

    • Bake the fish for 12 to 15 minutes or until the internal temperature reaches 141/61 – 145/63 degrees Fahrenheit/Celsius.
    • Serve with your favorite side dishes. Enjoy!
