Ingredients

For the Shrimps and crabmeat stuffing

  • 1 pound jumbo or colossal shrimps peeled, deveined. Optionally cut the shrimps in half lengthwise.
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon umami spice mix (recipe link below)
  • 2 tablespoons extra virgin olive oil
  • crabmeat stuffing - 1/2 recipe (link in notes for recipe)

For the Maitake Mushrooms

For The Bronzino:

  • 2 - 2 1/2 pounds whole branzino (2 fish) Called, gutted, rinsed and dried. with paper towels
  • 1 teaspoons kosher Salt adjust for your diet
  • 1 teaspoon umami spice seasoning mix (recipe link in notes)
  • 2 tablespoons homemade lemon herbed vinaigrette (recipe link in notes)

Instructions

Preheat oven 425F/218C Degrees

    For the Shrimps

    • Add the shrimps to a medium mixing bowl. Season the shrimps with the salt, freshly ground black pepper and the umami seasoning. Mix to coat.
      1 pound jumbo or colossal shrimps, 1/2 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper, 1/2 teaspoon umami spice mix
    • Heat a stainless steel skillet. Add the extra virgin olive oil.
      2 tablespoons extra virgin olive oil
    • Add the shrimps and cook 1 minute per side. Remove from the pan and cool slightly.
    • Add half of the shrimps into the crabmeat stuffing and mix to combine. Set aside.
      Note: I usually make a pound of the crabmeat stuffing and use 1/2 to stuff salmon and the other half I use to stuff any whole Fish like this branzino.
      Alternatively you can buy 1/2 pound crabmeat instead. However the crabmeat usually are sold by 1 pounds.

    Prepare the Maitake Mushrooms

    • Add the mushrooms to a quarter sheet pan or a large mixing bowl. Add in the garlic, thyme sprigs, salt, freshly ground black pepper and olive oil. Toss to coat with the seasoning. Set aside.
      1 large head maitake mushrooms, 2 cloves garlic, 6 - 8 sprigs fresh thyme, 2 - 3 tablespoons extra virgin olive oil, 1/4 teaspoon kosher salt, 1.4 teaspoon freshly ground black pepper

    Season and stuff the branzino and bake

    • Line a half sheet pan with parchment paper. Add the branzinos to the sheet pan. Season the fish all over with salt, freshly ground black pepper and umami seasoning mix.
      2 - 2 1/2 pounds whole branzino, 1 teaspoons kosher Salt, 1 teaspoon umami spice seasoning mix
    • Stuff the branzinos with the crabmeat-shrimp mixture, using half of the mixture per fish.
    • Pour 1 tablespoon of the vinaigrette on top of each fish.
      2 tablespoons homemade lemon herbed vinaigrette
    • Add the mushrooms to the pan, in a single layer all around the fish.
    • Bake the fish and mushrooms 15 to 20 minutes until the fish is cooked to 141F degrees internal temperature.
    • Plate and add more vinaigrette over the fish to serve if desired. Enjoy!
