A healthy smoothie that contains a “Powerhouse ” of nutrients and vitamins. Using the fresh coconut water from a young coconut helps to reduce the calories, it has a nutty flavor and it’s loaded with potassium; not to mention electrolytes. The nutty taste complimented the fresh ripe mango that is loaded with vitamin C. I added kiwi for its refreshing flavor and most of all Kiwi is amongst one of the top nutrient dense fruits. I added a touch of nutty sweetness by using peanut butter. This is such a rich breakfast drink – it will keep you filled for hours.

Powerhouse Coconut Mango Smoothie
Ingredients
- 1 cup fresh coconut water
- 1 cup crushed ice
- 1 ripe mango sliced (discard seed)
- 2 ripe kiwis peeled and cut in two
- 1/2 lime juiced
- 1 tablespoon peanut butter
Instructions

Add all ingredients in a blender. Blend until you achieve a smoothie texture - about one to one and a half minutes.

Pour into your favorite glass, sip and enjoy.
Recipe Notes
Many fine supermarkets now carry fresh young coconut with the harder outer-shell removed. Use a very sharp butcher knife to cut off the top of the coconut leaving a hole at the top to pour out the water. Depending on the size of the coconut you will get about 1-1/2 cups to 2 cups water. The fresh coconut water taste so much better than the ones out of the box or can. It's worth the investment.
