Parmesan Herbed Basmati Rice

- 2 – 3 tablespoons extra virgin olive oil
- 4 – 5 cloves fresh garlic peeled and grated (about 1 tablespoon)
- 1/2 cup mixed herbs parsley, thyme, basil and oregano
- 1 cup basmati brown rice rinsed thoroughly
- 1/2 – 3/4 teaspoons kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups chicken stock or vegetable stock
- 1 – 1 1/2 Tablespoons butter
- 3/4 – 1 cup freshly grated Parmesan cheese
Instructions
- Heat the olive oil in a 2-quart saucepan. Use medium heat.2 – 3 tablespoons extra virgin olive oil
- Add in the garlic and mixed herbs. Mix and cook 1 to 2 minutes. Lower the flame if needed.4 – 5 cloves fresh garlic, 1/2 cup mixed herbs
- Add in the basmati brown rice. Season with salt and freshly ground black pepper. Mix and cook 2 minutes.1 cup basmati brown rice, 1/2 – 3/4 teaspoons kosher salt, 1/4 teaspoon freshly ground black pepper
- Pour in the stock. Bring to a boil. Cover, lower heat and simmer 30 minutes until the liquid is fully absorbed.2 cups chicken stock
- Turn off the flame. Add in the butter and use a fork to gently fluff until the butter is melted and fully incorporated.1 – 1 1/2 Tablespoons butter
- Add in the cheese and mix until the cheese has melted and fully incorporated. Cover and rest 10 minutes. Serve with your favorite entrée. Enjoy!3/4 – 1 cup freshly grated Parmesan cheese
