The perfect crunchy texture, yet tender; these pan fried veggies are a healthier version of stir fry. It’s a quick and easy side dish or make it a lunch or dinner recipe by adding some chicken, shrimps or beef. I like to serve this recipe with my Roasted Duck | Sesame Soy Marinade. Pan Fried Vegetables

Equipment

  • Large Saute Pan or Wok

Ingredients

  • 2 tablespoons avocado oil
  • 1 tablespoons sesame oil
  • 1 pound Haricots Vert (French Style String Beans) snip off ends
  • 4 medium carrots peeled and diced
  • 2 small onions peeled and cut into chunks
  • 1 teaspoon red pepper flakes can make this optional
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon sea salt
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon garlic minced
  • 1 teaspoon finely chopped ginger
  • 1 tablespoon soy sauce
  • 4 scallions sliced diagonally
  • 1/2 cup fresh basil leaves

Instructions

  • In a large saute pan, heat the avocado and sesame oil over medium heat.
  • Add the string beans and carrots. Give it a gentle mix. Turn up heat to medium high. Cook 2 to 3 minutes, mixing once or twice.
    Note: The string beans will start to develop bright green color with a slight charred look.
  • Add the onions. Give it a quick mix. Add the red pepper flakes, if using, the freshly ground black pepper and the salt. Mix. Cook 2 minutes.
  • Add in the fresh thyme leaves, garlic and ginger. Give it a quick mix. Cook 1 minute.
  • Add in the soy sauce. Mix coating the veggies with the sauce. Cook 2 minutes. Mix once or twice.
    Note: The string beans will become bright green, and develops some charred look.
  • Add scallions and whole basil leaves. Mixing and cook until the basil is wilted. About 1 minute.
  • Turn off the stove. Transfer to a serving platter. Serve with your favorite entree. Enjoy.

Notes

Video tutorial available for this recipe – link in summary. This recipe can be made in a wok, if preferred. I used French Style String Beans (Haricots Verts) in this recipe but you can substitute regular string beans. You may need to cook them a minute longer.
