The perfect crunchy texture, yet tender; these pan fried veggies are a healthier version of stir fry. It’s a quick and easy side dish or make it a lunch or dinner recipe by adding some chicken, shrimps or beef. I like to serve this recipe with my Roasted Duck | Sesame Soy Marinade. Pan Fried Vegetables
A quick and healthy side dish.
- 2 tablespoons avocado oil
- 1 tablespoons sesame oil
- 1 pound Haricots Vert (French Style String Beans) snip off ends
- 4 medium carrots peeled and diced
- 2 small onions peeled and cut into chunks
- 1 teaspoon red pepper flakes can make this optional
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon sea salt
- 1 teaspoon fresh thyme leaves
- 1 teaspoon garlic minced
- 1 teaspoon finely chopped ginger
- 1 tablespoon soy sauce
- 4 scallions sliced diagonally
- 1/2 cup fresh basil leaves
In a large saute pan, heat the avocado and sesame oil over medium heat.
Add the string beans and carrots. Give it a gentle mix. Turn up heat to medium high. Cook 2 to 3 minutes, mixing once or twice.
Note: The string beans will start to develop bright green color with a slight charred look.
Add the onions. Give it a quick mix. Add the red pepper flakes, if using, the freshly ground black pepper and the salt. Mix. Cook 2 minutes.
Add in the fresh thyme leaves, garlic and ginger. Give it a quick mix. Cook 1 minute.
Add in the soy sauce. Mix coating the veggies with the sauce. Cook 2 minutes. Mix once or twice.
Note: The string beans will become bright green, and develops some charred look.
Add scallions and whole basil leaves. Mixing and cook until the basil is wilted. About 1 minute.
Turn off the stove. Transfer to a serving platter. Serve with your favorite entree. Enjoy.
