Spinach is one of our favorite green leafy vegetables. For many years we ate them sautéed with olive oil and garlic, or raw and also a once a year creamed spinach. For a while now, I’ve been grilling spinach, which is atypical for this vegetable. The recipe came about when our stove was broken, and I had to cook all meals on our outdoor grill. At the first try, I did a creamed spinach which was amazingly delicious and ever since, I’ve been making grilled spinach. This version, is the same that I used for my original creamed spinach but it does not contain the cream or nutmeg.

To grill the spinach, just add all the seasoning ingredients and be generous with the olive oil without over doing it. Dump it into a grill basket with small or fine holes. Grill with the grill cover closed as much as possible, except for when opening to mix two or three times during the cooking. It’s usually bright green and wilted within 12 to 15 minutes or less depending on how full the basket is. Transfer to a serving dish and eat with your favorite entree. It pairs very well with our Cowboy Steak.

Did you know? Spinach is healthier when cooked verses raw? Spinach is loaded with oxalic acid, which blocks the absorption of iron and calcium. When cooked at high temperature the oxalic acid breaks down allowing for absorption of higher levels of iron and calcium. If you love eating raw spinach, you will still get iron and calcium but not as much as when it’s cooked.

Spinach | How to Grill Spinach

Ingredients

  • 16 ounces spinach organic baby spinach
  • 1/2 medium onion white or yellow, diced
  • 1 clove fresh garlic pressed in a garlic press or finely minced
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon sea salt or kosher (adjust for your diet)
  • 2 tablespoons extra virgin olive oil

Instructions

PREHEAT GRILL 450F TO 500F DEGREES:

  1. Add the spinach to a large mixing bowl or aluminum foil tin.

  2. Add in the onions, garlic, salt, pepper and drizzle in the olive oil.

  3. Mix thoroughly. Transfer to a grilling basket.

  4. Grill for 12 to 15 minutes, mixing two to three times. Keep the grill covered as much as possible. Cook until the spinach is wilted and bright green.

  5. Transfer to a serving bowl. Serve with your favorite entree. Enjoy.
