What type of bread makes the Best French Toast and what is the ratio or formula for the best batter?

One of the most important factors for making the Best French Toast Sandwich is the type of bread used. Use the wrong type of bread and the toast becomes too soggy. The bread needs to be hearty and sturdy enough to soak up the delicious batter. Moreover, the sturdiness of the bread usually result in a crusty crunchy toast. Further, let’s talk about the batter. Sometimes French toast batters can be too sweet or too eggy. Yikes! For the best batter, use a one egg to quarter cup whole milk ratio. Regarding the fat choices for making the best French Toast Sandwich, the use of butter by itself results in two possible situations. One, the butter burns quickly with high heat, despite the toast cooking quickly. And two, to prevent the butter from burning, the heat needs to be lower. Hence, the resulting crust is soft rather than a crunchy texture. When combing fats for the toast, use a neutral oil, like avocado oil which has a high smoke point. The neutral oil combined with flavory butter leaves the toast crunchy and tasty.

Ingredients

  • 2 thick slices of a hearty sandwich bread We use our homemade milk sandwich loaf. But Challah Bread works too. Bread slices should be approximately 1/2 inch or up to 3/4 inch thickness.
  • 2 teaspoons avocado oil
  • 1/2 tablespoon butter
  • 2 tablespoons asiago cheese grated. Or use your favorite cheese.

FOR THE FRENCH TOAST BATTER: (this batter can be use to generously coat up to 4 slices of bread)

  • 1 large egg whisked thoroughly
  • 1/4 cup whole milk
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon freshly grated nutmeg
  • 1/8 teaspoon ground cardamom
  • 1 teaspoon cornstarch
  • 6 to 8 fresh tarragon leaves finely minced
  • 1/4 teaspoon vanilla extract
  • 2 teaspoons raw honey or maple syrup adjust sweetness to your taste

FOR EGG SANDWICH

  • 2 large eggs
  • salt and freshly ground black pepper to taste

Instructions

LET'S MAKE THE BATTER:

  • In a small bowl or measuring cup, add the egg. Whisk it thoroughly.
    Note: don't skip this step to avoid streaks of egg whites. Works better to whisk eggs before adding the milk and remaining ingredients.
  • Add the milk and all the remaining ingredients. Whisk thoroughly to combine. Strain the batter into a flat bottom bowl high enough to fit the bread flat.
    Note: Sift in at least the cornstarch to prevent dealing with lumps.

LET'S COOK THE FRENCH TOAST:

  • Heat a cast iron skillet using medium high to high heat.
  • Once the pan is hot, takes a few minutes, add the avocado oil and butter. Maintain heat to medium to medium high.
    Note: A little smoking is okay but you don't want the fat to start burning, so adjust heat as needed.
  • Quickly dip the bread slices in the batter, coating both sides thoroughly.
    Note: Do not let the bread sit in the batter as this will cause the bread to be soggy and it will not yield the best crusty, crunchy toast.
  • Cook each side of the battered bread 2 to 3 minutes per side until lightly golden.
    Note: Adjust heat if needed.
  • Remove the toast to a serving plate and sprinkle with the cheese while the toast is hot.

COOK THE EGGS YOUR FAVORITE WAY

  • I fry my eggs soft in the same cast iron pan.
