A Sweet and Savory version of the most amazing Breakfast or Brunch Sandwich

Seriously, this is the very Best French Toast Sandwich. A bold and deliciously scrumptious French Toast using the perfect tasting batter. And that burst of savory tasting asiago cheese and fried eggs takes it to another level. The French toast takes advantage of the density of an amazing Milk Loaf Sandwich Bread.
What type of bread makes the Best French Toast and what is the ratio or formula for the best batter?
One of the most important factors for making the Best French Toast Sandwich is the type of bread used. Use the wrong type of bread and the toast becomes too soggy. The bread needs to be hearty and sturdy enough to soak up the delicious batter. Moreover, the sturdiness of the bread usually result in a crusty crunchy toast. A dense sandwich bread makes for the perfect toast or a challah bread works too. Try this Milk Loaf Sandwich Bread.
Further, let’s talk about the batter. Sometimes French toast batters can be too sweet or too eggy. Yikes! For the best batter, use a one egg to quarter cup whole milk ratio. This formula may be doubled or scaled up when making a larger batch of French toast. Also, these spices work magic. Example, ground cinnamon, freshly ground nutmeg and ground cardamom are excellent combination. . Added deliciousness includes vanilla extract and freshly minced tarragon.
Moreover, use this trick and the French Toast yields the very best crunchy crust ever. Add one teaspoon cornstarch into the batter. It helps to create a slight dryness between the batter and the bread. Additionally, a combination of avocado oil and butter gives great flavor while preventing the toast from burning. The avocado oil has a high smoke point so it balances the butter’s low smoke point.
What kind of pan is best for cooking French Toast?
Similar to the importance of the choice of bread, the pan also makes a big difference. Some chefs love to use a non stick pan. However, the cast iron pan is an amazing choice. It has a natural non-stick coating once treated correctly. For the French toast, the cast iron pan, like my favorite Lodge double handle or single handle skillet works brilliantly. Over a medium high heat coated with a mixture of a high smoke point and a lower smoke point fat, the crust of the toast comes out perfectly crunchy. A cast iron griddle works perfectly when making a larger batch of French toast.
Regarding the fat choices for making the best French Toast Sandwich, the use of butter by itself results in two possible situations. One, the butter burns quickly with high heat, despite the toast cooking quickly. And two, to prevent the butter from burning, the heat needs to be lower. Hence, the resulting crust is soft rather than a crunchy texture. When combing fats for the toast, use a neutral oil, like avocado oil which has a high smoke point. The neutral oil combined with flavory butter leaves the toast crunchy and tasty.
Lastly, use the perfectly crunchy and tastiest French toast to assemble the Best French Toast Sandwich. If that’s not your thing, top it will your favorite fruits and maple syrup and enjoy. You will not be disappointed by using the toast to make this sweet and savory style breakfast sandwich. Happy cooking!

-
Heat a cast iron skillet using medium high to high heat.

Once the pan is hot, takes a few minutes, add the avocado oil and butter. Maintain heat to medium to medium high.
Note: A little smoking is okay but you don't want the fat to start burning, so adjust heat as needed.
-
Quickly dip the bread slices in the batter, coating both sides thoroughly.
Note: Do not let the bread sit in the batter as this will cause the bread to be soggy and it will not yield the best crusty, crunchy toast.
