Crustless Turkey Vegetable Pizza
Equipment
- 1 9.5 inch frying pan or 10 inch
Ingredients
- 1 pound ground turkey meat white or dark meat
- 1 tablespoon fresh sage finely minced
- 4 cloves garlic peeled and grated
- 1 pound sweet turkey sausage casings removed (may use hot turkey sausage)
- 1 teaspoon fennel seeds
- 1 teaspoon ground coriander
- 1 teaspoon red pepper flakes (Optional)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 teaspoons cornstarch
- 1 tablespoon extra virgin olive oil plus more for coating the cast iron pan
- 1 large egg beaten
FOR TOPPINGS:
- 2 tablespoons extra virgin olive oil
- 1 small onion peeled and sliced
- 3- 4 cups baby organic spinach
- pinch of sea salt and freshly ground black pepper
- 1 1/2 cups fresh tomatoes seeded and diced
- 1/4 – 1/2 cup freshly grated asiago cheese
- 2 – 4 ounces goat cheese optional
Instructions
Preheat oven 425F/218C degrees
- Add the turkey and sausage into a medium mixing bowl. Add in the sage, garlic, fennel seeds, ground coriander, red pepper flakes, salt, black pepper, extra virgin olive oil and cornstarch. Mix thoroughly.1 pound ground turkey meat, 1 tablespoon fresh sage, 4 cloves garlic, 1 pound sweet turkey sausage, 1 teaspoon fennel seeds, 1 teaspoon ground coriander, 1 teaspoon red pepper flakes, 1 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper, 3 teaspoons cornstarch, 1 tablespoon extra virgin olive oil, 1 large egg
- Lightly brush a 10 to 12 inches cast iron pan with extra virgin olive oil. Dump the ground meat mixture into the greased pan. Using the palm of your hands or a spoon, spread the mixture into a single flat layer in the pan, pressing it down lightly
- Transfer the pan into the preheated oven and bake for 25 to 30 minutes or until the meat looks golden and test at 160F degrees when tested with a meat thermometer.
Meantime, precook the toppings.
- Heat a stainless steel skillet or frying pan. Add the olive oil. Saute the onions 3 to 4 minutes until it's fragrant and starts to lightly brown around the edges.2 tablespoons extra virgin olive oil, 1 small onion
- Add in the spinach. Mix to wilt and combine with the onion. Season with salt and freshly ground black pepper to taste. Turn off the heat and allow the mixture to cool.3- 4 cups baby organic spinach, pinch of sea salt and freshly ground black pepper
Assemble the Pizza with toppings and bake
- Remove the crustless meat pizza from the oven. Sprinkle on the fresh diced tomatoes. Sprinkle on half of the asiago cheese followed by the spinach mixture. Sprinkle on the remaining asiago cheese. Top with goat cheese if using.1 1/2 cups fresh tomatoes, 1/4 – 1/2 cup freshly grated asiago cheese, 2 – 4 ounces goat cheese
- Return the pan to the oven and bake for 7 to 8 minutes until the cheese melts.Note: The goat cheese will soften but not melt.
- Remove from oven. Slice and serve hot. Enjoy.
