FOR THE SPICE MIX

For the Aromatics and Shrimps

  • 1 1/2 pounds wild shrimps like wild black prawns
  • 3/4 teaspoon kosher salt
  • the spice mix
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons garlic roughly chopped
  • 2 teaspoons fresh thyme leaves finely chopped

Instructions

Make the Spice Mix

  • Add the mustard seeds, cumin seeds and red pepper flakes to a small spice grinder. Grind into a powder.
    1 teaspoon black mustard seeds, 1 teaspoon cumin seeds, 1 teaspoon red pepper flakes

Season the shrimps

  • In a medium mixing bowl, Add the shrimps, salt and the spice mix. Mix to coat the shrimps with the spice mix.
    1 1/2 pounds wild shrimps, 3/4 teaspoon kosher salt, the spice mix
  • Heat a cast iron skillet over medium high heat. Once the pan starts smoking, add the olive oil.
    1/4 cup extra virgin olive oil
  • Add in the seasoned shrimps. Sear the shrimps 2 minutes per side. Remove to a bowl, Turn down the flame to medium low.
    1 1/2 pounds wild shrimps
  • Add in the garlic and thyme. Mix and cook 30 to 60 seconds until fragrant
    2 tablespoons garlic, 2 teaspoons fresh thyme leaves
  • Add back the shrimps. Mix and cook 1 to 2 minutes until the shrimps are fully cooked. Turn off the stove.
  • Plate and serve as an appetizer or serve for lunch with rice or bread.
